Year Round Jam
4 (10oz) packages frozen strawberries, defrosted
2 tbsps lemon juice
5 cups sugar
3 oz liquid pectin
Put strawberries in a large pot. Add lemon juice and sugar; mix well. Bring to a full
rolling boil over high heat. Boil rapidly for 1 1/2 minutes, stirring constantly.
Remove from heat, stir in pectin. Stir and skim fro 5 minutes to cool slightly.
Pour into hot sterilized jars; seal at once. Raspberries or peaches
may be substituted for strawberries.
