Turtle with Sauce Piquant
1/3 cup olive oil
1/3 cup presifted flour
1-pound canned tomatoes
8 ounce canned tomatoes is
3 large cloves of garlic, minced
1 large onion, chopped
1 cup chopped celery
1 cup chopped green pepper
1 quart water
2 teaspoons Tabasco sauce
two bay leaves
salt and pepper to taste
3 poundswhile in desperately, diced
1/4 cup chopped parsley
1/4 cup chopped scallions
1 cup dry sherry
Heat oil in a large heavy saucepan or Dutch oven. Add flour; stir in tomatoes,
tomato sauce, garlic, onion, celery, green pepper and water. Bring to a boil,
tirring constantly. Add Tabasco sauce, bay leaves, salt and pepper. Cover;
simmer for 10 minutes. Add turtle meat; cover; simmer until tender. Add parsley
and scallions; simmer for five minutes. Just before serving, remove from heat;
stir in sherry.
