Tortellini Soup
1 pound ground Italian sausage
Oil for sauteing
1 or 2 onions, according to taste
2 zucchini, cut in coins
4 carrots, cut in coins
10 cups chicken stock
2 tsp dried basil
2 bay leaves
1 large can crushed tomatoes
2 cans stewed tomatoes
1 tsp salt
19 oz frozen tortellini, cheese or beef preferred
2 tsp parsley
Black pepper to taste
Brown sausage. In a big pot, saute onion, zucchini and carrots until onion is translucent.
Ad chicken stock, basil, bay leaves, crushed tomatoes, stewed tomatoes, salt and sausage. Cook until vegetables are desired consistency.
Add tortellini, parsley and black pepper; cook until tortellini are done.
