Tortellini Pesto Salad

2 pounds cheese filled tortellini

1/2 cup diced red peppers

1/2 cup diced green peppers

1/2 cup kalmata olives

1/2 cup diced tomatoes

1/2 cup Parmesan cheese

2 cups, sour cream

1 cup pesto sauce

Toss every thing together in a bowl. Blend sour cream and pesto until

well blended and mix with veggies and pasta. Marinate overnight.

PESTO

3/4 cup fresh basil leaves or fresh spinach

1/4 cup chopped fresh flat leaf parsley

1 tbsp + 1 tsp olive oil

1 tbsp Parmesan cheese

1 garlic clove

prepare pesto: In food processor, combine basil, parsley, oil, cheese

and garlic; process until mixture forms a paste.
