Tongue
Moose or deer tongue is just as delicious and can be cooked just as a beef tongue.
Wash a large moose tongue thoroughly and cover with cold water. Add 1 tbsp of salt
1/2 tsp crushed peppercorns, 2 bay leaves, and 1 medium onion.
Simmer covered and slowly until rice and tender, about 1 1/2 hours per pound.
Cool and peel off skin and any inedible tissue. Slice and serve hot or cold.
Sliced tongue sandwich with a horseradish sauce is wonderful.
