Tomato and Red Pepper Spread
1 cup roasted red sweet peppers, drained
1/3 cup drained, oil packed dried tomatoes
1/3 cup crumbled ricotta salata cheese
1/3 cup walnuts
2 cloves garlic, quartered
2 tbsp red wine vinegar
2 tbsp fresh parsley leaves
1/4 tsp cayenne pepper
Toasted baguette slices
Place sweet peppers, tomatoes, cheese, walnuts, garlic,
vinegar, parsley and cayenne pepper in a food processor.
Process with several pulses until desired consistency.
Serve on baguette slices. Makes 1 1/2 cups.
