Terrapin and Turtles
Both
the small southern terrapin and the larger snapping or soft-shell turtle
are
considered great delicacies and are relished by gourmets throughout
the country.
How to Prepare Diamond Back Terrapin
One Terrapin
1 small carrots,sliced
1 small onion, sliced
1 stalk celery, quartered
1 tsp salt.
Bring a large saucepan of water to a boil. Plunge Terrapin into water; boil for five minutes.
Drain Terrapin. Remove skin by rubbing with a towel. Draw out head with a skewer to
get skin from neck Cut under shell; remove outer shell; then carefully remove and discard
gallbladder, sand bag and thick heavy intestines. Liver, small intestines and eggs are used
with meat; put things back terrapin; cover with boiling water. Add remaining ingredients.
Cover; simmer for 30 to 40 minutes, or until meat is tender. Remove meat from stock;
use as desired or in your favorite recipe or in soup.
