Terrapin A La Maryland

Prepared terrapin meat

1 tablespoon butter

1 tablespoon flour

1 half cup light cream

2 egg yolks

1 teaspoon lemon juice

1 tablespoon dry sherry

1 egg, hard cooked and sliced

lemon wedges

parsley sprigs

Cut terrapin meat into small pieces. Chopped liver and small intestines;

mix with terrapin legs and terrapin meat. Melt butter in a saucepan;

stir in flour. Gradually stir in cream. Cook over low heat, stirring constantly,

until sauce is thick and smooth. Beat egg yolks in a small bowl; stir and a little

sauce. Return address to sauce. Cook over low heat, stirring constantly,

until mixture begins to summer. Stir and terrapin mixture, lemon juice and

sherry. Heat to serving temperature. Pour into serving dish or use terrapin shell.

Garnish with egg slices lemon wedges and parsley sprigs.
