Swordfish with Tomatoes
4 swordfish steaks
2 cloves garlic, minced
3 tbsp olive oil
4 cups prepared or homemade, chunky tomato sauce
3 tbsp cilantro, chopped
Freshly ground pepper to taste
4 tsp black olives, sliced
1 tsp sugar
1/3 cup lime juice

Preheat broiler. Place swordfish in a shallow baking dish; rub with
garlic. Drizzle olive oil over fish. Broil for about five minutes on each side,
or until fish flakes easily and is firm in the center. In a large pot, combine
tomato sauce, cilantro, pepper, olives, sugar and lime juice. Warm on low
heat for several minutes. When fish is cooked, place on serving platter.
Pour tomato sauce mixture on top. Garnish with parsley.
Note: Swordfish can be grilled or broiled.
