Swiss Peas
6 cups frozen peas
approx 3 10 oz boxes
2 cups sliced green onion tbs butter or margarine
3 tbs butter or margarine
2 tbs. all purpose flour
2 cups whipping cream
1 tsp finely shredded lemon peel
1 1/2 shredded Swiss cheese
In a large sauce pan cook the peas according to pkg directions
Meanwhile, in a medium saucepan cook onion in butter until
tender but not brown. Blend in flour and 1/2 tsp salt. Add cream and
lemon peel. Cook and stir until thickened and bubbly. Add cheese.
Cook and stir until cheese is melted. Do not boil. Drain peas. Return to large saucepan.
Add sauce- stir to coat. Makes 12 servings
