Sweet Potato Sensation
2 tbsp extra virgin olive oil
2 medium sweet potatoes, peeled, quartered, and
cut into 1/2 inch thick slices
3 small beets, peeled, quartered and cut into 1/4
thick slices
4 medium carrots, cut into 1/2 inch slices
1 acorn squash, peeled, seeded and
cut into 1/2 inch thick slices
3 tbsp maple syrup
salt
freshly ground pepper
Preheat oven to 425 degrees. In a large bowl, combine vegetables and oil and toss to coat vegetables. PAlace vegetables in two large baking dishes.
Roast for 25 minutes.
Toss the vegetables in syrup and season to taste. Return to the pan and roast for an additional 15 minutes.
