Sweet Potato Fritters

1 cup flour

1 tsp baking powder

1/4 tsp salt

1/4 cup milk

2 eggs, beaten

2 tbsp butter or margarine, melted

2 cups shredded raw sweet potato

4 slices bacon, cooked and crumbled

Vegetable oil

Syrup (optional)

Combine flour, baking powder and salt; stir well. Add milk, eggs and

butter; stir until smooth. Add sweet potato and bacon; mix well.

Heat 3-4 inches of oil to 275 degrees in a Dutch oven. Carefully drop

batter by rounded teaspoonfuls into hot oil. Cook only a few at a

time. Fry 2 minutes or until fritters are golden brown, turning once. Drain

on paper towels. Serve warm with syrup, if desired.
