Sweet Onion Casserole Variation Two
2 large onions,sliced 1/4 inch thick
4 slices day old bread, cut into cubes
3/4 cup grated cheddar cheese
2 eggs, beaten
3/4 cup milk
3/4 tsp salt
1/8 tsp pepper
Cayenne pepper to taste
Butter or margarine
Preheat oven to 375 degrees. Place onion slices in a large saucepan,
add enough water to cover and parboil for 10 minutes; drain. Place half of
onions into a 8x8 baking dish that's been coated with nonstick cooking spray.
Layer with half of the bread crumbs and half the cheese. Repeat with the
remaining onions, breadcubes and cheese. In a medium sized bowl, combine the
eggs, milk, salt and black pepper. Pour mixture over the top layer. Sprinkle
with cayenne pepper and dot with butter. Place baking dish into a larger baking
dish; add hot water to the outer dish halfway up the side of the inside dish
(like making a custard). Bake for 40 minutes, until golden. Serves 4
Note: This is a great make ahead dish. Just warm up in the microwave
