Sweet and Tangy Grilled Game Hens
Perfect for Low Carb menus
1 (10 0z) jar apricot preserves
1 tsp grated lime peel
3 tbsp fresh lime juice
1 tbsp chopped cilantro
1/2 tsp salt
1/4 tsp pepper
2-3 serrano chili peppers, seeded and chopped

Cornish game hens, thawed, giblets removed
Melt preserves in small saucepan over low heat; remove
from heat. Add remaining sauce ingredients; mix well.
Cut game hens in half lengthwise through breast bone
and back. Brush outside of each half with sauce.
GRILL INSTRUCTIONS
Heat half of gas grill to medium heat or place charcoal
alone 1 side of charcoal grill and heat until coals are hot.
When ready to barbecue, place hens, cut side down,
on unheated side of grill. Cook 60-75 minutes or until
game hens are fork tender and juices run clear, brushing
occasionally with sauce. Discard any remaining sauce. Serves 6.
OVEN INSTRUCTIONS
Prepare sauce and game hens as directed above. Heat oven to
350 degrees. Line a large baking pan with foil. Place hens, cut side
down, in foil lined pan. Brush with sauce. Bake at 350 degrees
for 60-70 minutes or until game hens are fork tender and juices run clear,
brushing occasionally with sauce. Discard any remaining sauce.
You can cut the sugar calories from this recipe by using low or no-sugar
apricot preserves. This would make it a great choice for low carb dining or
entertaining.
