Sweet and Sour Pork

1 egg

2 tbsp flour

1/2 tsp salt

1/8 tsp pepper

1 lb boneless pork, cut into 1 inch cubes

3 tbsp vegetable oil

3 medium green peppers

9 oz can pineapple chunks

2 1.2 tbsp cornstarch

2 1/2 tbsp soy sauce

1/4 cup sugar

1/4 cup vinegar

Chinese noodles or cooked rice

In a small bowl , combine egg, flour, salt and pepper; use to coat pork thoroughly.

Heat oil in a large skillet; brownpork well on all sides. Cover; simmer for 30 minutes.

Meanwhile, discard stems and seeds from green peppers; cut into 1 inch squares;

cook in boiling salted water for 10 minutes; drain. Drain pineapple; reserve syrup.

Add green peppers and pineapple chunks to pork; cover; simmer for 10 minutes.

Meanwhile, in small saucepan blend cornstarch and reserved syrup, Stir in soy

sauce, sugar and vinegar. Cook over low heat, stirring constantly, until sauce is

thickened and clear. Pour ofver meat mixture; simmer for 5 minutes.

Serve pork and sauce on Chinese noodles or rice.
