Steak and Parmesan Aioli

Aioli is a garlic flavored mayonnaise, served cold

Parmesan Aioli

3/4 cup light mayonnaise

2 tbsp olive oil

2 cloves garlic, crushed into paste

3 tbsp grated Parmesan cheese

1/8 tsp black pepper

2 tbsp chopped flat leaf parsley

Steak:

6 slices beef tenderloin (about 1 1/2 lb) pounded
to 1/2 inch thickness or less

1/8 tsp salt

1/8 tsp black pepper

2 tbsp vegetable oil

In a medium size bowl, whisk together the mayonnaise

and olive oil. Stir in the garlic, Parmesan cheese, pepper and

parsley. Cover; refrigerate for at least 1 hour.

Season the slices of beef tenderloin with the salt and pepper. In a large

skillet, heat the oil over high heat. Add the beef; cook for 1 minute on each

side or until browned and cook through. Remove to warm platter. Serve

immediately with aioli, and prepared refrigerated mashed potatoes.
