Herbs perk up flavor without increasing fat or sodium, so they're a friend to anyone watching his or her diet.
For maximum taste, store your herbs in a cool dry place in tightly closed containers. They begin to lose flavor after 1 year. Remember to replace them from time to time.
If you prefer fresh herbs, use three times the amount of the dried herb called for. For example if your recipe calls for 1 teaspoon dried herb, use three teaspoons of the fresh.
Fresh herbs are very perishable, so buy only as much as you need. Immerse freshly cut stems in about 2 inches of water. Cover the leaves loosely with a plastic bag and refrigerate for a few days.
