Sour Lemon Squares
CRUST
1 cup flour
1/3 cup butter or margarine
2 tbsp confectioners' sugar
Mix the above to a fine crumb and sprinkle evenly in a greased
9" square pan. Bake at 350 degrees until mixture is golden
brown, approximately 15 minutes, depending on your oven.
FILLING
While above is baking, mix together the following:
1 cup brown sugar, firmly packed
2 eggs beaten
3/4 cup shredded coconut
1/2 cup chopped nuts
1/8 tsp baking powder
1/2 tsp vanilla
Spread this mixture on the baked crust, while still hot.
Bake for 20 minutes more.
TOPPING
Grated rind of one lemon
Juice of one lemon
1/2 cups confectioners' sugar
Mix to make a creamy mixtute and spread this over the top as soon
as the pan is taken from the oven. Cool and cut into squares.
