Smoked Sausage and Bean Soup

1 pound small red potatoes, cut

4 medium carrots, sliced

1 medium onion, chopped

1 medium stalk of celery, sliced

2 (15 oz) can cannellini or navy beans

2 (14 oz) cans chicken broth

1 tsp dried thyme leaves

1/2 tsp seasoned salt

1 lb fully cooked kielbasa sausage, cut in
half lengthwise and cut into 1/4 inch slices

2 tbsp chopped fresh parsley

Spray a 3-4 quart slow cooker with cooking spray. In the cooker, mix all ingredients except

kielbasa and parsley.

Cover; cook on Low heat setting for 8-9 hours.

Stir in remaining ingredients. Increase heat setting to High. Cover; cook 30 minutes

longer or until sausage hot.

 

Diced cooked ham can be substituted for the smoked sausage.
