Sicilian Slaw

3/4 cup orange juice

6 Tbsp olive oil

1/3 cup red wine vinegar

1 1/2 tbsp sugar

1/2 tsp each salt and pepper

4 cups shredded savoy or regular green cabbage

2 cups shredded red cabbage

1 bulb fennel, trimmed, thinly sliced

1/2 cup each sliced red onion, pitted il cured olives and golden raisins

1/2 cup slivered fresh, mint leaves

Whisk orange juice, oil, vinegar, sugar, salt and pepper in a large bowl until blended.

Add remaining ingredients except mint; toss to mix and coat. Cover and refrigerate

at least one hour to blend flavors and slightly wilt cabbage.

When ready to serve, add mint and toss to mix.
