Scallops in Butter Sauce
1 1/2 lb bay scallops
1/2 tsp salt
1/4 cup lemon juice
3/4 cup unsalted butter, cut into small pieces
1 clove garlic, minced
2 tbsp fresh lemon juice
Coat grill rack or basket with non stick cooking spray. Preheat grill
to medium. Season scallops with salt and drizzle with lemon juice.
Grill scallops 2 minutes on each side or until opaque.
Heat a heavy saucepan over medium heat. Add butter and heat, stirring
constantly until it begins to brown, about 6 minutes. Add garlic and cook
1 minute. Stir in lemon juice. Spoon over scallops. Serves 4
