Savory Stuffed Fish
3-5 pound whole fish ( trout, red snapper, etc.)
2 tbsp melted butter
Salt and pepper
Stuffing:
1 beaten egg
1/4 tsp dried thyme and 1/2 tsp dill seed
2 tbsp chopped parsley
1/4 tsp salt
Dash of pepper
1/2 cup butter
3 tbsp chopped onion
2 tbsp hot water
3 cups white bread crumbs
Saute onion in 1/2 cup butter for 5 minutes. Combine the remaining stuffing ingredients,
tossing lightly to mixd well. Sprinkle inside of fish with salt and pepper. Place in
shallow baking dish; stuff and close opening with skewers. Brush top of fish with
2 tbsp melted butter. Bake uncovered for 10 minutes in a 500 degree oven.
Reduce heat to 400 degrees and bake 10 minutes per pound, or until fish flakes
easily with a fork. Serve with lemon wedges. Make 4-8 servings.
