Roast Wild Duck

To reduce the gamy flavor of a wild duck, insert a small piece
of carrot into the cavity, and parboil before roasting. If duck
is to be stuffed, use a peeled onion instead of a carrot.

Salt and pepper

1 onion or favorite stuffing

Wine Sauce for Game

Preheat oven to 450 degrees. Dry duck; rub inside and out with salt and pepper.
Insert onion in cavity, or fill with stuffing. Roast in preheated oven for about 20
minutes, turning occasionally to brown evenly. Serve with Wine Sauce for Game

Wine Sauce for Game:
.

1/2 cup currant jelly

1/2 cup water

1 tbsp butter

1 tsp salt

Juice of 1/2 lemon

Pinch of cayenne

3 cloves

1/2 cup port

In saucepan combine all ingredients except port.

Bring to a boil; simmer for a few minutes. Strain; stir in port.
