Roast Partridge

4 (3/4) pound partridges

4 slices bacon

1 cup sour cream

Preheat oven to 400 degrees. Rub partridges inside and out

with salt and pepper. Fasten bacon to breasts. Place birds,

breast up, on rack in shallow roasting pan. Bake in preheated

oven for 30 minutes. Reduce temperature to 350 degrees.

Roast for 50 minutes longer or until tender. Pour sour cream

over birds. Return to oven until juices bubble. Arrange birds on

serving dish. Serve with pan juices.
