Roast Grouse

4 (1lb) grouse

3 tart apples

1 large onion finely chopped

1/2 tsp salt

1/2 tsp baking soda

Pepper

1 cup water

Day before, place grouse in large bowl. Add water to cover; sprinkle with 1 tsp salt

and baking soda. Cover; let stand overnight. Next day, preheat oven to 375 degrees.

Drain grouse; pat dry. Prepare Apple Stuffing: Combine onion, apples, dash of pepper

and 1/2 tsp salt; mix well. Sprinkle grouse inside and out with salt and pepper.

Fill cavities with stuffing. Sew or skewer openings. Place on rack in roasting pan.

Add water. Cover; roast in preheated oven for 1 hour. Cover; roast in preheated oven

for 1 hour. Remove cover; roast for 20 minutes longer or until tender. Serve with pan juices.
