Roasted Wild Goose with Sausage Raisin Dressing

Cleaned and dressed geese, that have been soaked in salt water
for a few hours

Vegetable oil

3 cups fresh bread crumbs

1 cup cornbread crumbs

1/3 lb ground sausage

3 tbsp butter

1/2 cup chopped onion

1/2 cup chopped celery

1/4 tsp pepper

1 tsp each sage and marjoram

1/2 cup raisins

Bacon strips

To prepare stuffing, crumble sausage in a large skillet, Brown well and

remove to a warm pan. Add butter to the pan; saute onion and

celery. Add raisins and seasonings. Stir in bread crumbs and

cornbread crumb. Mix well, until all is moistened.

Rinse geese thoroughly inside and out. Stuff with dressing.

Place on rack in a shallow roasting pan. Cover entire top of

bird with bacon strips. Roast in a preheated 350 degree oven

for 1-2 hours, or until done. These geese are delicious served with

any cranberry recipe.
