Roasted Pepper Chicken
1 tablespoon olive oil
1 cup up chicken or two
chicken breasts
1 7 oz jar of roasted red peppers
Preheat oven to 375 degrees. In a large heavy oven proof frying pan,
heat oil and brown chicken pieces on all sides.
Pour peppers, with liquid over chicken. Cover pan, transfer to oven
and bake 45 minutes. Makes 4 servings.
