Roasted Garlic Puree

3 large heads garlic, unpeeled

3 tbsp extra virgin olive oil, divided

1 tbsp fresh lemon juice

1/4 tsp salt

Coat grill rack with nonstick cooking spray. Preheat grill to medium direct heat.

Cut off top of each garlic head to expose cloves. Place garlic on 12x8 inch

piece of heavy duty aluminum foil. Drizzle 1 tsp olive oil into top of each garlic head.

Bring sides of foil up to enclose garlic. Seal loosely, leaving room for expansion

and allowing garlic to sit flat on grill. Place foil packet on grill rack; grill, covered 35-45

minutes to 1 hour or until garlic is soft. (Check doneness by inserting knife in to center of garlic;

knife should not meet any resistance) Remove from grill and cool slightly.

Squeeze or scoop pulp from each clove, discarding peel and placing pulp in a

small bowl. Mash garlic. Blend remaining 2 tbsp olive oil, lemon juice and salt into garlic. Use

as a spread on bread, crackers or vegetables. Serves 6
