Roasted Cauliflower Gratin
1 large head cauliflower, separated into florets
1 clove garlic, chopped
2 tsp olive oil
1/2 cup unseasoned bread crumbs
2 tbsp grated Parmesan cheese
1 tsp dried parsley
1/4 tsp salt
1/8 tsp pepper
Preheat oven to 400 degrees. Coat a baking dish or 4 ovenproof ramekins
with nonstick cooking spray. Add cauliflower, garlic and olive oil; stir to
coat. Add 1 tbsp water. Cover with foil; bake 20 minutes. Combine bread-
crumbs, cheese, parsley, salt and pepper in a small bowl; set aside.
Remove cauliflower from oven. Uncover; sprinkle with bread crumbs mixture.
Return to oven; bake 20 minutes more or until cauliflower is tender.
