Rice with Garlic and Shallots

4 tbsp vegetable oil

1 cup sliced shallots

3 cups water

1 tsp grated lime peel

1 tsp salt

1 1/2 cup long grain white rice

1 tbsp minced garlic

1 tsp grated fresh ginger

1 tsp turmeric

Heat 2 tbsp oil in heavy medium skillet over medium heat. Add shallots; saute until deep golden, about 7 minutes.

Season with salt and pepper. Combine water, lime and salt in heavy medium saucepan. Bring to boil. Add rice.

Reduce heat to low. Cover tightly, cook until liquid is absorbed, about 20 minutes. Uncover; fluff with fork. Cool

completely. Mix garlic, ginger and turmeric in small bowl. Heat 2 tbsp oil in large heavy skillet over medium heat.

Add garlic mixture; saute until fragrant, about 30 seconds. Add rice; saute until coated with spice mixture and heated

through, about 2 minutes. Season with salt and pepper. Transfer to large bowl. Rewarm shallots over medium heat,

sprinkle over rice and serve.
