Rice Pilaf
RICE PILAF
RICE PILAF
1 clove garlic
2 tsp olive oil
1/2 cup onion
2 cups fat skimmed chicken broth
1 cup uncooked long grain white rice
1 bay leaf
1 cup diced tomatoes
1 cup slant-sliced fresh green beans, blanched,
or frozen beans, thawed
In medium saucepan heat oil. Add onion and garlic; saute 4-5 minutes
stirring occasionally. Add broth, rice, bay leaf and seasonings, cover
and simmer 20 minutes. Remove bay leaf and stir in tomatoes and beans.
