Refrigerator Chocolate Cheesecake
1 tablespoon (15ml) unflavored gelatin
2/3 cup (160ml) water
1 pound (450g) softened cream cheese
6 ounces (170g) melted chocolate chips
1 cup (250ml) sweetened condensed milk
1 1/2 teaspoon (8ml) vanilla
3/4 cup (180ml) whipping cream, whipped
1 cup (250ml) chocolate curls
2 cups (500ml) chocolate wafer crumbs
2 tablespoons (30ml) granulated sugar
1/4 cup (60ml) melted butter
Crust:
Combine the last 3 ingredients and press into the bottom of a 9" (23cm) spring form pan and chill.
Filling:
Soften the gelatin in the water then heat until gelatin has dissolved, remove from the heat and cool. Cream the cheese with the chocolate, milk and vanilla. Stir in the gelatin. Fold in the whipped cream. Pour into shell and refrigerate for 4 hours.
Garnish with chocolate curls.
Makes one 3-layer cake
