Ranch Style Frijoles
2 lbs dried pinto beans
2 tsp salt
1/2 tsp black pepper
2 large onions, diced
4 cloves garlic, chopped
4 oz can roasted green chili peppers, chopped
8 oz can taco sauce
1 lb 12 oz can tomatoes
1/2 tsp cumin seeds
Day before, wash beans; soak overnight in water to cover generously.
Next day, drain beans; cover with fresh water by 2 inches. Add salt;
bring to a boil; simmer over moderate heat for about 1 hour. Add water,
if necessary. Add remaining ingredients; cook over low heat for 1 - 1 1/2 hours,
or until beans are tender and sauce is reduced.
These frijoles are easily converted into a delicious chili con carne by the addition
of 2 lbs of chopped beef and 1 large onion, chopped, which are browned in any
kind of fat. Add to beans after the first hour of cooking.
