Quick Caramel Pecan Rolls
(microwave)
These are fun to make, but you need either
a microwave safe muffin pan or a silicone
muffin pan
3 Tbsp butter
1/4 cup packed brown sugar
1 tbsp corn syrup
1/2 tsp cinnamon
1/4 cup chopped walnuts
1 pkg refrigerated biscuits
In a 1 cup glass measure, cook butter until melted. Stir in brown sugar,
corn syrup and cinnamon. Cook, uncovered, until sugar dissolves
(30-40 seconds on high) Spoon the sugar mixture into a microwave safe
muffin pan. Sprinkle chopped nuts and place one biscuit over nuts in each cup.
Cook uncovered on high 1- 1 1/2 minutes or until done, giving the pan a half turn
after 30 seconds. Let stand for 1 minute. Invert onto a plate. Serve warm.
Makes 6 rolls.
