Quick Cabbage Chow-Chow
1 medium cabbage, chopped
2 cups chopped onion
2 green peppers, chopped
2 tbsp salt
1 quart vinegar
1 cup brown sugar
1/4 cup black mustard seed
1/4 cup white mustard seed
1 tsp celery seed
In a large bowl or crock mix vegetable and salt; let stand for 1 hour.
Turn into a colander; drain for 3 hours. In a large pot, combine remaining
ingredients. Bring to a boil; boil for 1 minute. Add vegetables; bring back
to a boil. Pour into sterilized jars and seal at once.
