Pumpkin Roll

 

3 eggs
1 cup sugar
2/3 cup pumpkin
3/4 cup flour
1/2 teaspoon cinnamon
1/2 teaspoon baking powder
1 teaspoon ginger
1/2 teaspoon nutmeg
1/2 teaspoon cloves
1 cup chopped walnuts
1 cup powdered sugar

Filling:

8 ounces cream cheese
4 Tablespoons butter
1/2 teaspoon vanilla


Beat eggs, add sugar, pumpkin and rest of ingredients in order.

Grease/flour 15x10x1 cookie sheet. Spread mixture on sheet. Top with nuts and bake at 375 degrees for 17 minutes.

Turn on a towel sprinkled with powdered sugar. Roll in a towel and cool.

Unroll after cool and spread with filling.
