Pot Roasted Wild Duck

1 wild duck

Salt and Pepper

1 medium onion, chopped

1 green pepper, chopped

1 stalk celery, chopped

2 cloves of garlic, crushed

1 medium turnip, peeled and chopped

1 tart apple, peeled and chopped

1/2 cup butter

Flour

Cooked rice

Season duck inside and out with salt and pepper. In a mixing bowl

combine onion, green pepper, celery, garlic, turnip and apple; mix well;

use to stuff cavity of duck. Truss or sew opening. Melt butter in a Dutch oven

or large heavy saucepan; brown duck well on all sides. Cover; simmer over

very low heat for 3-4 hours, or until tender. Turn occasionally. Add a little water

at a time if duck begins to stick. Arrange duck on a serving dish; keep warm.

Thicken gravy with flour; simmer for a few minutes. Serve duck with gravy and rice.
