Pork Souvlaki with Tzatziki

 

3/4 cup sweet and sour sauce

1/4 cup olive oil

1 tbsp chopped garlic

1/4 cup chopped green onion

2 tbsp chopped fresh sage

Dash of pepper

2 lb pork tenderloin, cut into 1 1/2 inch cubes

6 pita rounds

Tzatziki (Greek dressing for gyros or salads) See recipe below.

In a mixing bowl, combine sweet and sour sauce, olive oil, garlic

green onion, sage and pepper. Add pork cubes and toss well to

coat. Cover and let marinate in refrigerator for 6-8 hours or overnight.

Thread pork cubes onto skewers

Preheat barbecue or broiler. Cook 15-25 minutes or until internal temperature

reaches 145 degrees. A few minutes before pork is done, place pita bread and

top with tzatziki.

Serves 6

Tzatziki

2 (8 ounce) containers plain yogurt

2 small or 1 large cucumber, peeled, seeded and diced

2 tbsp olive oil

Juice of 1/2 lemon

salt and pepper to taste

1 tbsp dill, chopped

3 cloves garlic, peeled

In a blender , mix together yogurt, cucumber, olive oil,

lemon juice, salt, pepper, dill and garlic. Blend until well mixed.

Store in a tightly covered container. Refrigerate for at least one

hour before serving
