Pickled Pig's Feet
6 pig's feet
Salt to taste
3 cups vinegar
1 medium onion, sliced
1 tsp mixed pickling spices
At least 2 days before, wash pigs feet; place in Dutch oven or large
heavy saucepan. Cover with water; bring to a boil. Cover; simmer for 2
hours, or until tender. Drain; place pigs's feet in stone jar. In saucepan
combine vinegar, onion and spices; bring to a boil. Pour over pigs's feet.
Cover; let stand for at least 2 days before using.
