Pickled Peaches

4 lbs underripe peaches

3 cups cider vinegar

3 cups sugar

3 cinnamon sticks

1 tsp cloves

1 tsp allspice

2 tsp quick cooking tapioca

Put peaches in a large bowl; cover with boiling water. Let stand for

3 minutes; drain; remove skins. In a large pot combine remaining

ingredients. Bring to a boil. stirring occasionally; boil over high heat

for 5 minutes. Add a few peaches at a time; poach over low heat

for 3 minutes, or until peaches are heated through and are pierced

easily with a fork. Put peaches in hot sterilized jars and Pour syrup over them and

seal at once.
