Peppermint Snowballs

3/4 cup hard peppermint candies, finely crushed and divided

1/2 cup powdered sugar

1 cup unsalted butter, softened

1/3 cup powdered sugar

1 tsp vanilla extract

2 1/4 cup all purpose flour

1/4 tsp salt

Preheat oven to 325 degrees. In a small bowl, combine 1/4 cup crushed candy and

1/2 cup powdered sugar; set aside. In a medium bowl, combine butter and 1/3 cup

powdered sugar. Mix in remaining crushed candies and vanilla. Stir in flour and salt.

Shape rounded teaspoonfuls of dough into 1 inch balls. Place about 2 inches apart

on an ungreased cookie sheet and bake for 10-12 minutes or until set but not brown.

Immediately remove from cookie sheet and roll in reserved candy mixture. Let cool

completely on wire rack, then roll in candy mixture again.
