Peanut Brittle Candy Slabs

2 cups crushed, store bought peanut brittle, separated

1/2 cup creamy peanut butter

1 tbsp creamy peanut butter

 

Line 3 (9x5 inch) loaf pans with plastic wrap; set aside
(press and seal works well)

Microwave white chocolate morsels in a large microwave-safe bowl at 70% power for 1 minute and 15 seconds. Morsels will not look melted. Stir them until they are melted. Microwave again at 15 second intervals if necessary.

Gently fold in the 1/2 cup peanut butter and 1 1/2 cups of the crushed peanut brittle.

Quickly spread melted white chocolate evenly in prepared pans; quickly spread the 1 tbsp peanut butter of the top and swirl with a knife. Immediately top this with the reserved 1/2 cup crushed peanut brittle, pressing gently with fingertips. Let stand 1 hour or until firm. Yield 3 slabs/about 2 1/3 pounds.
