Pasta with Bacon and Mint

 

2 tsp olive oil

2 large onions, sliced

1/2 box pasta

1 cup chicken broth

3 tbsp real bacon bits

3 tbsp freshly grated Parmesan cheese

1 cup mint leaves

2 tbsp pine nuts, toasted

Heat oil in heavy skillet. Add onions and cook slowly until they

start to soften and turn slightly brown. Stirring frequently. 25-30 minutes.

Cook your favorite pasta in 4 quarts of boiling water, according to

package directions. Drain when finished cooking.

Meanwhile, put chicken broth and onions in a large bow. Add

hot pasta to mixture. Add bacon, cheese and mint. Toss Well. Garnish

with pine nuts.
