Oven Fried Parmesan Chicken

1 cup cracker crumbs

1/3 cup grated parmesan cheese

1 tbsp dried parsley flakes

1 tsp salt

1/8 tsp pepper

1/4 tsp garlic powder

1/8 tsp paprika

1 (2 1/2 - 3 lb) broiler-fryer chicken
cut into eighths or your favorite chicken
parts

1/2 cup butter or margarine, melted

Preheat oven to 350 degrees. In a large bowl, combine the cracker crumbs,

parmesan cheese, parsley flakes, salt, pepper, garlic powder and paprika;

stir well. Rinse the chicken under cold water and pat dry. Dip the chicken

pieces in the melted butter, then dredge in the cracker crumb mixture.

Place the chicken in a 9x13 inch baking pan that has been coated with

nonstick vegetable spray. Bake for 1 1/4 hours or until chicken is fork

tender and no pink remains. 4 servings.

To reduce the fat in this recipe use a low or not fat butter substitute, and

remove the skin from the chicken pieces.
