Ouzo Cake

 

1 cup chopped pecans or walnuts

1 pkg yellow cake mix

4 eggs

1 pkg vanilla instant pudding

1/2 cup cold water

1/2 cup vegetable oil

1/4 cup Ouzo

GLAZE

1/2 lb butter

1/2 cup water

1/4 cup Ouzo

1 cup granulated sugar

Preheat oven to 325 degrees. Grease and flour a 10" tube pan, or a 12 cup bundt pan.

Sprinkle nuts over bottom of pan. Mix all cake ingredients together. Pour batter over nuts.

Bake 1 hour. Cool and invert onto serving plate. Prick top. Prepare glaze by melting butter

in saucepan. Stir in water and sugar. Boil 5 minutes, stirring constantly. Remove from heat,

stir in Ouzo. Drizzle and smooth glaze over top and sides. Allow cake to absorb glaze.

Repeat until glaze is used up.

Note: reduce the sugar in this recipe by substituting Splenda brand sugar substitute cup for cup.

You can also reduce the fat by replacing butter or margarine with a low or no fat substitute.
