Orange Crepes

2 cups flour

1/4 tsp salt

4 eggs, lightly beaten

2 cups milk

1 tbsp orange juice

1 tbsp melted butter

Currant Jelly

Confectioners' Sugar

Into a mixing bowl, sift together flour and salt. Stir eggs and milk into the

flour mixture. Continue stirring until smooth. Batter should just coat your

spoon. If it is too thick, stir in a little milk. Stir in orange juice and butter.

Let stand for to improve texture of the cakes. To cook crepes, heat a 5-6 inch

skillet until very hot. Add about 1/2 tsp butter and swirl it to cover the bottom

of the pan. Pour in about 2 tbsp butter. Tilt pan in circular motion to spread

batter evenly and thinly to edge. This must be done quickly before batter

has chance to set. Cook for about 1 minute or until set and browned on

one side. Turn. Brown other side. Spread with currant jelly. Roll up.

Sprinkle with confectioners' sugar.
