Onions with Pasta Nests

 

1 tbsp butter

1 tbsp olive oil

2 lbs sweet onions (such as Vadalia onions), sliced 1/2 inch thick
and separated into rings

1/2 tsp salt

1/4 tsp ground black pepper

4 oz dried coiled pasta

1 1/4 cups water

In a 12 inch skillet heat butter and olive oil over medium beat until butter melts. Add onions, salt and pepper. Cook, covered, for 15 minutes, stirring occasionally. Uncover. Cook for 10-15 minutes more or until onions are tender and browned, stirring frequently. Remove onions from skillet and set aside.

Add pasta to hot skillet. Cook and stir for 4 minutes or until pasta is browned. Add cooked onions and water to skillet. Bring to boiling; reduce heat. Cover and cook 5 minutes more until pasta is tender, stirring occasionally.

Serve immediately.

Makes 3 cups.
