Onion and Goat Cheese Focaccia

1 (1 lb) loaf frozen bread dough, thawed
according to package directions

1 tbsp olive oil

1 medium red onion, thinly sliced

1/4 tsp black pepper

1/4 tsp crushed dried oregano

1/4 tsp crushed red pepper flakes

1 medium tomato, cored and chopped

2 tbsp sliced ripe olives

1 cup crumbled goat cheese

Preheat oven to 400 degrees. Roll out dough to an 8 x 12

inch rectangle. Place on a greased baking sheet. Heat oil

in medium skillet over medium high heat. Add onion, pepper

oregano and red pepper flakes; cook and stir 5 minutes.

Spread onion mixture over bread dough. Sprinkle on chopped

tomatoes and olives. Sprinkle on cheese. Bake 15-18 minutes or

until bread is puffed and golden. Serves 6
