Onion and Dill Potatoes
1 3/4 lb small new red potatoes,
quartered
Water
1/4 cup finely chopped onion
3 tbsp butter, melted
1 tbsp chopped fresh dill
or 1 tsp dried dill weed
/14 tsp salt
1/4 tsp pepper
In 3 quarts saucepan place potatoes and enough water to cover.
Cook over high heat until water comes to a full boil ( 4-6 minutes).
Reduce heat to medium. Continue cooking until potatoes are fork tender
(8-10 minutes); drain. Return potatoes to pan. In small bowl stir together all
remaining ingredients; pour over potatoes. Cook over medium heat. Gently
stirring occasionally, until heated through ( 3-5 minutes). Serves 6
