Old Fashioned Baked Beans
1 lb dried navy or pea beans
2 quarts water
1/4 cup molasses
2 tbsp brown sugar
1 tbsp salt
1/4 tsp dry mustard
1/4 lb salt pork, scored
Day before, wash beans, place in water to cover in large saucepan.
Cover, soak overnight. Next day, bring to boil; cover; simmer for 30 minutes
. Drain; reserve 2 cups of liquid. Preheat oven to 275 degrees. Grease a 2
quart casserole dish. Arrange beans in casserole; stir in reserved liquid,
molasses, sugar, slat and mustard. Press pork into the center of the beans.
Cover; bake for 4 hours; adding water, if necessary. Remove cover;
bake for 15 minutes longer.
